As women, our plates are often so full. I feel better physically, emotionally, and mentally when I eat things that work with my body instead of against it. So that I have a fighting chance to do what I need to each day at work, play, and home.
For the first meal of the day, it doesn’t get better than a wholesome banana muffin (more on that later), a cutie, and local eggs with cottage cheese.
FARM FRESH EGGS
Like… literally I was at the farm store this weekend- Olde Tyme Country Store in Taylors, SC – when the egg lady arrived with fresh eggs she had just taken out from the coop. It doesn’t get fresher than that! I love supporting local farmers, I love the drive through my hometown, I love the sense of purpose of a Saturday drive.
At home, I prepare them with cottage cheese. The eggs are creamy and fluffy, perfect texture. AND it boosts the protein. Higher protein = you’re full for longer.
The cottage cheese is another local favorite! Happy Cow Creamery Cottage Cheese in Pickens.
ORANGE CUTIE
Nothing special here! The orange is a Cutie I got from the Walmart down the road.
Cuties have a long shelf life, Vitamin C, God-made sugar. No prep-work is involved, just grab and peel.
BANANA MUFFIN
This banana muffin is packed with 100% organic sprouted flour. Why does that matter? It’s a valuable source of fiber and vitamins! Even better, it will not spike your blood sugar like regular flour (you know that crash you get after eating a muffin from Starbucks or the grocery store – you won’t get that with this muffin).
DON’T FORGET YOUR WHY: EXECUTIVE FUNCTIONING
Eating a breakfast full of protein, fiber and complex carbs is good for anyone. It’s especially good for those with executive functioning challenges (also known as ADHD), mamas and children alike.
Eating this combination makes brain functioning better during the day, improving concentration, impulsively and reducing anxiety, leading to more calm.
I feel fantastic when I eat in this way and my mind and body say thank you! It doesn’t matter what time your first meal of the day is…just make sure it follows this formula! Stay away from things that spike your blood sugar – the day will end up in overwhelm, fatigue and frustration- I know! I’ve been there!!!
If this breakfast sounds good to you, you might like my anti-inflammatory tea (hot or iced) or these healthful oat cookies, too!!
Happy cooking!
